Recipe - Meat Claw Cabbage

This is a quick and easy "side dish" recipe from Shea Castleberry that you can use any time you are cooking some barbecue. It is a fresh take on bbq sides. You just need a head of cabbage, some bbq seasoning and sauce and some foil. Cook this up at your next backyard barbecue. Meat Claw Cabbage Recipe

Ingredients and Information

  • 1 head of cabbage

  • 1 stick of butter

  • BBQ Rub (recipe on next page)

  • Favorite bbq sauce

  • Foil

Prep Time: 5 - 10  minutes

Cook Time: 1  hour  at 225 degrees

Serves 2 - 4 people

Preparation and Cooking

  1. Wash, peel and core head of cabbage. 

  2. Chop cabbage into four wedges.

  3. Melt 1 stick of butter in the microwave. 

  4. Pull four pieces  of aluminum foil and place one wedge on each piece of foil.

  5. Liberally brush melted butter onto each wedge of cabbage.

  6. Add bbq rub to each wedge to desired amount.

  7. Drizzle bbq sauce onto each wedge.

  8. Close foil around each wedge and add to the smoker.

Cooking Process

With about one hour left of the cook for the meat or main dish that you have on the smoker, add the four, wrapped cabbage wedges to the smoker. Leave the foil closed and cook until desired texture of cabbage; roughly 1 to 1.5 hours at 225 degrees. Once the wedges are at the desired texture, remove from heat and let cool for 10 minutes, remove from packet and serve.
